Denver Steak with Green Harissa


 

Cut from the chuck, the denver steak is highly marbled and full of flavor. If you’re a ribeye or strip lover, this is a fun and unique alternative to try. By itself, it’s delicious, but wait til you try it with our green harissa. Recipe below!

Denver Steak with Green Harissa

Denver Steak with Green Harissa

Ingredients

  • 1 BHF Denver steak
  • 1 tbsp whole cumin
  • 1 tbsp corriander
  • 1 jalapeño de seeded
  • 2 scallions
  • 1 clove garlic 
  • 5 oz EVOO
  • 1 bunch parsley de stemmed
  • 1 bunch of cilantro with stems
  • 1/2 lemon juiced and zested

Instructions

Cooking the Denver
  1. 4 hours prior cooking, generously season with salt and refrigerate.
  2. Remove 30-45 minutes before cooking and let come to room temperature.
  3. Preheat an oven to 200°
  4. Place on roasting rack and cook until internal temperature reaches 120° for rare, 130° for
  5. medium-rare or 140° for medium
  6. Heat a skillet to med/high heat and add fat
  7. (clarified butter, oil, tallow, etc.)
  8. Sear all sides of the Denver for 1.5-2 minutes per side
  9. Rest for 7-10 minutes and slice against the grain
Green Harissa
  1. Toast spice in a pan until fragrant
  2. Add spicers to mortar and pestle and grind
  3. Add all ingredients to blender
  4. Pulse on slow until smooth texture
  5. Season with salt
