About US

Everything we do is to support one goal: Bring you the best beef possible.

The quality you taste in Black Hawk Beef is a direct result of the care and commitment we take in the health of our animals and stewardship of our farmland.

We’re passionate about taking good care of our land, our animals, our team and you.

Black Hawk Farms produces the best meat possible by going back to the basics. We take care of our soil and pasture. We raise healthy, happy animals. We grow the grains used to finish our beef. We humanely process the meat locally to ensure quality and freshness.

We've been breeding and raising cattle on our farm for decades, and part of that process has involved selectively breeding Wagyu to encourage the best traits in our cattle.

Simply put: that means our cattle maintain a friendly disposition and most importantly superb marbling and flavor.

AMERICAN WAGYU

Not all American Wagyu is Created Equal

Wagyu cattle are sought after for their superior marbling and flavor, and we know ours are the best of the best because we’ve spent years selectively breeding them to develop key personality traits and ideal characteristics of the finished beef. Additionally, our cattle are raised in a low-stress environment: a hands-on approach with familiar faces, minimal transport, and a comfortable home.

Our American Wagyu has its origins in the acclaimed Wagyu cattle of Japan. Over centuries of careful breeding, Japan developed Wagyu beef, producing some of the most beautifully marbled, umami-rich beef in the world. Our herd of American Wagyu cattle have bloodlines descending directly from this renowned Japanese breed stock. Here at Black Hawk, we’ve cross bred our heritage line of pure-bred Wagyu animals with Black Angus cattle, which creates all of the notable qualities of Japanese Wagyu with the sturdiness of Black Angus.
